Butternut Squash Soup with Caramelized Apples


Butternut Squash is most definitely one of my favourite vegetables....errr I mean fruit. Technically it's a fruit, but you get me! This is the second year we've grown squash in our garden and I love it! Add the sweetness from local Ontario apples, THEN, lightly caramelize them with some onions and you have yourself one mighty fall inspired soup! Did I mention it's gluten free vegan too!

I always say that soup truly is one of the easiest things you can make at home. The trick is to not complicate it. Vegetables don't need a lot to become delicious in a soup. A few spices and some vegetable stock can go a long way. I also like to add oat or cashew cream to this recipe to compliment everything but if you don't have any on hand it's delicious without it as well. I've also make it with oat cooking cream (store bought) and it works as well!

And this soup freezes perfectly so you can make a batch and enjoy it fresh, as well as pull it out of the freezer on a cold (upcoming) winter day! Highly recommend getting some Grow Your Roots Foods Buttermilk Biscuit mix to make and go with it...or with any soup for that matter!
